Ingredients

Cauliflower Bites

  • 1 head of cauliflower, broken into individual florets

  • 1 cup all purpose flour

  • 1 cup coconut milk

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • 1/4 tsp turmeric powder

  • 1/4 tsp cumin

  • 1/4 tsp black pepper

  • 3 tbsp. nutritional yeast - you can find this in most stores or online here https://amzn.to/2Tk4L87

  • 1 tbsp dried parsley

  • 2 cups crispy onions (I use the French's brand)

Buffalo Sauce

  • 1 cup Franks Hot Buffalo Sauce (or any other brand of your choice)

  • 1 and 1/2 sticks vegan butter (such as Earth Balance)

Additional Toppings

  • Dairyfree ranch dressing - I use the JustforAll Brand which honestly tastes identical to normal ranch. I purchase it here https://amzn.to/2MFELBr

  • Parsley

Instructions

1. Preheat the oven to 375 degrees F

2. Put the parsley, nutritional yeast, crispy onions, paprika, garlic powder, pepper, cumin, and turmeric into a food processor and blend until the crispy onions are broken apart into very tiny pieces. Set aside in a bowl.

3. Pour the flour and the coconut milk into a separate bowl and whisk until smooth.

4. Line a baking sheet with aluminum foil.

5. Dip each cauliflower floret into the flour/milk mixture then into the seasoning/crispy onion mixture and then place on the baking sheet.

6. Bake the cauliflower for 35 minutes (flipping halfway)

7. Put the buffalo sauce and butter into a saucepan and warm on medium/low heat for 7 minutes, stirring often.

8. Once the cauliflower bites are taken out of the oven, let them cool for 10 minutes then combine them along with the sauce in a big bowl and toss.

9. Enjoy with vegan ranch and parsley sprinkled on top (optional) :-)
