Summer Veggie Salad
Ingredients
- 2 avocados, diced
- 1 orange bell pepper, chopped
- 1 English cucumber, diced
- 1/2 large red onion, sliced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 lemon
- 2 tbsp. extra virgin olive oil
- 1/4 cup cilantro, chopped
- 1/2 tsp (or more) pink Himalayan sea salt (or regular sea salt)
- 1/4 tsp black pepper
Instructions
1. Chop up all of the vegetables accordingly (excluding lemon)
2. Throw the chopped avocados, orange bell pepper, cucumber, red onion, tomatoes, garlic, and cilantro into a large bowl and mix
3. Add in the olive oil, juice of 1 lemon, and the seasonings to the bowl. ENJOY :-)
