Spicy Cajun Ramen
Ingredients
- 4 cups vegetable broth
- 2 packets ramen noodles (discard seasoning packets)
- 1/2 tbsp. toasted sesame oil
- 1 cup broccoli (chopped)
- 2 cups mushrooms (chopped)
- 1/2 cups carrots (shredded)
- 2 cups kale
- 4 cloves garlic, minced
- 1 stalk of celery (chopped)
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- red pepper flakes for garnish
- green onions (chopped) for garnish
Instructions
1. In a medium-large pot heat up the toasted sesame oil then add all of the ingredients (including garlic) minus the seasonings and garnish ingredients. Sautee the veggies for about 5-6 minutes over medium heat.
2. Add the seasonings and mix very well.
3. Add in the vegetable broth and bring to a boil. Add in the ramen noodles and reduce the heat to low for about 5-7 minutes or until the noodles are cooked and soft (stirring well)
4. Serve garnished with red pepper and green onions and ENJOY :-)
