Southwestern Tofu Scramble
Ingredients (Serves 2)
8 oz firm tofu (drain extra liquid)
1/2 red pepper chopped
1/2 red onion chopped
2 handfuls of spinach (loosely chopped)
3 cloves of garlic (minced)
1 tbsp olive oil
1/2 tsp turmeric
1/2 tsp sea salt
1/2 tsp pepper
1/2 tsp cumin
1/2 tsp chili powder
Small handful of cilantro (chopped)
Instructions
1. Heat a medium sized pan on medium heat with olive oil
2. Add the garlic, onion, red pepper, and spinach to the pan and saute for about 4-5 minutes (stirring frequently)
3. Add the block of tofu to the pan and crumble into small pieces using a spatula or wooden spoon or break the tofu up in a bowl prior to adding it to the pan.
4. Mix the tofu up with the veggies and add the seasonings. Cook for about 5-7 minutes
5. Add the cilantro on top and enjoy :)
Option: Enjoy with a side of avocado and toast
