Sundried Tomato, Mushroom & Spinach Pasta
Ingredients (Serves 4-6)
12 oz penne pasta noodles (I use Banza noodles - they are gluten free & so delicious!! I purchase them here: https://amzn.to/2TucTST
30 oz pasta sauce (I prefer garlic and basil flavored sauces)
1/2 white onion, diced
2 cups mushrooms, roughly chopped
4 cups spinach
3 cloves of garlic (minced)
1 cup sundried tomatoes (chopped)
1/3 cup basil (chopped)
1 tbsp olive oil
1 1/2 tsp sea salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp oregano
1/4 tsp paprika
Small handful of mozzarella cheese (optional) My favorite brand of dairy free cheese is Violife. Itβs literally the best.
Pinch of red pepper flakes
Instructions
1. Cook the pasta noodles and set aside
2. In a large pot, heat up the olive oil and sautee the onion and garlic on medium heat for about 2-3 minutes
3. Add the spinach, mushrooms, and sundried tomatoes to the pot along with all of the seasonings. Mix well and cook for another 3-5 minutes
4. Add the pasta noodles, sauce, and basil to the pot and mix well. Let the pot simmer for about 5 minutes.
Option: Add a handful of dairy free mozzarella cheese to the mix and cook until cheese has melted. I personally love the creaminess the cheese brings to the pasta. Make sure you get a dairy free cheese you really enjoy! :-) I also like to add a pinch of red pepper flakes!
