Banana Bomb Pancakes
Ingredients
- 2 and 1/2 cups all purpose flour
- 2 cups non-dairy milk (I used coconut milk)
- 2 tbsp. white vinegar
- 2 tbsp. brown sugar
- 1 tbsp. cane sugar
- 2 tsp. baking soda
- 1 and 1/2 tsp vanilla extract
- 1 banana (mashed well)
- 1/2 tsp. salt
- Vegan butter or coconut oil for cooking the pancakes
Instructions
1. Combine the non-dairy milk with the white vinegar and mix. Let this mixture sit for 5-10 minutes. This will create a buttermilk.
2. In a medium sized bowl, mix together the flour, sugar, salt, and baking soda.
3. Add the buttermilk, vanilla extract, and mashed up banana into the middle of the bowl and mix until you no longer see any dry spots. Be careful not to overmix.
4. Grab a skillet or griddle and heat it over medium heat. Once heated, grease the pan with vegan butter (or coconut oil).
5. Scoop out between 1/3 and 1/4 cup batter and put it into the pan for each pancake. Cook the first side until you start to see bubbles form in the batter or roughly 2 minutes. Flip the pancake to the other side and cook for 1-2 minutes,
ENJOY topped with extra ingredients of your choice. I decided to top my pancakes with some cut up bananas, powdered sugar, and syrup. :-)
