Thai Spicy Noodles
Ingredients
- 16oz linguine
- 1 red bell pepper, chopped
- 2 tbsp. olive oil
- 1 zucchini, cut into small pieces
- 1 cup mushrooms, chopped
- 1 and 1/2 cups broccoli, chopped
- 6 cloves garlic, minced
- 1/4 cup brown sugar
- 1/2 cup and 3 tbsp low sodium soy sauce
- 1 tbsp fresh ginger, minced
- 3 tbsp sriracha (feel free to adjust if you do not want the noodles to be spicy)
- 1/3 cup cilantro, chopped
- 1/2 tsp crushed red pepper flakes
- 1 tsp pink Himalayan sea salt
- 4 green onions, chopped
Instructions
1. Bring a large pot of water to a boil and cook the linguine according to the box instructions. Drain and set aside once done,
2. Using the same large pot that was used to cook the pasta, heat olive oil on medium heat and then add the minced garlic, zucchini, red bell pepper, mushrooms, Himalayan sea salt, and red pepper flakes. Stir ingredients in the pot and saute over medium high heat for about 6-8 minutes or until the veggies are cooked through.
3. Combine the sriracha, brown sugar, minced ginger, and 1/2 cup soy sauce in a medium bowl. Mix well.
4. Turn heat down on the pot to low and add the cooked linguini along with the sauce mixture. Stir to combine, then add the green onion, cilantro, and the additional 3 tbsp soy sauce. Stir again and enjoy!
